iPod Incorrect apps are checked (and sync'd) each time I connect ipod (multiple users)

All four of our family members share a central account (Mac) in iTunes using our respective iPod Touches (and single user account in OSX). When we plug in our devices to sync our songs and movies (which have always worked fine), the APPS tab does not accurately represent the apps loaded on any given device (nor do the virtual screens that appear to the right of the apps listing). Each of us are forced to scroll through the entire list and select/deselect what we have and want on our device. This is really a pain since we have so many apps now. Is this a known issue?

Also, is it possible to sync only our movies and songs without having to sync the apps?
