Hello,
I was wondering if it would be possible to upgrade a Fusion Drive
created initially as a combo of a 120GB SSD + 1 TB HDD
to something like 120GB SSD + 2 TB HDD or
250GB SSD + 1 TB HDD

You can create it with any combination you want, but to do so you have to destroy and recreate.
So, backup to your Time Machine before you start and then restore back once you've created out the CoreStorage.
 
It would probably be more trouble than it's worth.

Probably just as easy to plug in a 500gb USB3 Samsung t5 SSD, use that as the boot drive, and use the existing internal fusion drive for extra storage.
 
Depends on the MY of the mini. I don't see why people would go SATA3 SSD when they can go NVMe just as easy. Its the same difference performance gain again you get from HDD to SSD. While SATA3 SSD is better than a kick in the balls for sure, it's not the same as a devices designed around flash from the ground up.
