Let's say, hypothetically, that I've created a multi-page document in InDesign on 8.5x11 paper. If I wanted to change the paper size later, say to 8x10, would I be able to do that? I know I'd have to resize my graphics and everything. I'm more worried about the hassle involved with reformatting my text.
 
quick way to scale all the elements

Once you've reduced the paper size, you can scale all of the elements on a page simultaneously by grouping them. Once they are group you can scale them as one object, ungroup them and adjust as needed.

Another option would be to enable layout adjustment. Layout menu > Layout Adjustment. After enabling this, change the paper size. Now all of your text frames that are the size of the margins will resize to the new size of the page.

Awesome, I'll definitely try that.

One more question: Can I switch between reader spreads and printer spreads?

(I don't have a lot of info on this project yet, so I may need to change things drastically in the middle of it. That's why I'm asking these questions.)
