Hi, my wife's iPad is backed up to my iMac. Some files on the iPad have been edited and renamed, and she needs to get the originals back. Using iTunes can I restore individual files, or only restore the whole machine to an earlier backup?

Not done this with the iPad before so want to be certain how to do it.

iTunes file restore from backup is going to be an all or nothing solution, so probably not what you want. There are third party software solutions that should be able to accomplish what you you're looking to do; one that I'm familiar with is called iMazing:

That should allow you to browse through the backup and pull out the file you're interested in, and optionally push it back out to the iPad as well.
