Hello,

I'm planning on installing single 256GB SSD and using a 2TB external drive for storage, but I'd like my music and some day to day files on my SSD.

Am I better off partitioning the SSD for an OSX volume and a storage volume?

If so, what kind of size should I be looking to keep for the OS? I think 50gb should be plenty for the apps I'll be using, but should I give the OS "Breathing room" or will it run just as fast having as little space as it takes up?

You're not better of with two partitions. That will reduce your flexibility when allocating data.
 
Take a look at the Samsung Momentus XT drives. They might be perfect for your need. SSD fast booting, and still plenty of storage (up to 750Gb), and the HD part is 7200rpm.

Looks interesting, I hadn't really looked at hybrid drives

Would it be beneficial to partition the drive into say 100GB for OS X and 650GB for storage? or again, would that restrict the speeds?

Would you need to enable TRIM with these drives?

The speeds don't seem to be much less than a cheap SSD going by the boot up comparison video, but I'm more concerned with the heat/noise comparison between one of these and using an SSD?

What Mac Mini do you have?

You could try a Fusion drive of the 256 SSD and a 1TB HDD (total 1.25TB). Plenty of posts on that I am sure if you want to go down that avenue. Might give you want you want for speed and storage (depending on how much you have to store).
 
FWIW, I have a 120GB SSD in my iMac, and two external hard drives for more storage. The 250GB HD holds my music and photos while the 1TB HD is for back up of the other HD and the SSD. The (internal) SSD has all apps and all my non-media data (docs, pdf's, etc.). I have no problems running iTunes and playing music in this fashion. I wondered if I would notice any lag when playing music off the external HD, but it works great. There's a bit of a lag when running iPhoto due to pics being on the HD, but that's only when opening and closing.

So, based on my experience, I don't see the need to partition your SSD, and you might consider putting your music out on the external to free up space on the SSD.
