Has Big Sur taken away this option? I can only see 2 options App Store and App Store and recognised developers

To disable gatekeeper, open terminal and enter this:
sudo spctl --master-disable

Not sure if this still works in B.S. -- works in earlier versions.

Thanks, then I presume after I've installed I type the same but enable to turn it back on?

That might work, but I never tried it.
I wanted nothing to do with gatekeeper.
It is permanently disabled on ALL of my Macs.

Just right clicking on an app and then selecting Open (instead of just double clicking the app) should work doesn’t it? No need to disable gatekeeper.
Or maybe I misunderstood you...
