Install watchOS 3 on new Watch?

I am planning to buy an Apple Watch Series 3 but wouldn't like to update to iOS 11 on my iPhone 6 and I think watchOS 4 doesn't bring much to worth updating either. I've never had an Apple Watch so I don't know if it's possible to install an older software on a new device. So Apple Watch users, what do you think? Is it going to work or you don't know yet?

You cannot roll back the watchOS. I would also assume that new features of the Series 3 would depend on watchOS 4 anyway.

Direct from Apple's website:

Apple Watch Series 3 (GPS) requires an iPhone 5s or later with iOS 11 or later. Apple Watch Series 3 (GPS + Cellular) requires an iPhone 6 or later with iOS 11 or later.

Won't be signed for Series 3 anyway even if you could get it into some kind of DFU mode.
