You can only install ios apps on mac if the developer allows it. If you don’t find the iOS app you want on the Mac App Store (under the iPhone+iPad tab), it has not been ported to mac by the developer. Instagram app can’t be installed on Mac

So whats the point of Apple advertising running iOS/iPadOS apps on a M1 Mac if the developer has to do extra steps? Extra work means it almost doesn't happen. :D

It would seem to be to the developers advantage to be able to run on as many platforms as possible. I don't know what is involved in making it work. I run a couple of iPadOS apps on my 13" M1 and they are great and have become an important part of my workflow.

The developer literally just need to check a box in most cases. But many popular apps haven’t been ported to mac, maybe because the experience on a non-touch screen is not great or because they don’t want to add a layer of complexity for their support teams. It’s up to the developer, but I can see there are reasons to not allow an iOS app to be distributed on macs

I thought about this for months, and given that some popular games tailored for the iPads exist and Apple does specifically discuss using a mouse or trackpad with a IPad it seems like something forgotten by them to market.

Then add Universal Control topic and it looks like Apple needs to spend more time making this more seamless for developers so they can see increased App Store sales. If your licensed for use on the iOS or iPad doesn't mean separate sales requires for the Mac is a another issue.
