They won't count the ram in your system if you ever need to send it off for repair. I would take it out before you send it off because if your system needs some major help, they will bring it back to stock or BTO, the way it first came when you bought it.
I don't know if I'd get a MBP as my first apple computer. Maybe you should get the iBook sucessor when it comes out? (Unless you really have deep planss for it with photoshop/FCP or something). They are expensive, and have been having some physical build problems.
General rule of thumb - don't spend the extra money if you don't need the extra power.
