The MacBook Pro WILL be faster than your PowerMac on some things and slower than your PowerMac on other things, due to the nature of both chips.
I found a
link that compares PowerMac Dual 2.0 GHz with the new iMac 2.0 GHz ... since the iMacs and the MacBook Pros have the same kind of processors, this could be used. However, the MacBook Pro doesn't come in 2.0 GHz, so it will be a bit slower than the 2.0 GHz.
The Core Duo processors seem to be a lot better at rendering and multimedia processes, and since you're doing that I imagine that generally it will be faster for you.
And when I was at the Apple Store the other day I was playing with the 17" iMac. It seemed very snappy and it loaded most apps almost instantly (iLife, iWork etc. not pro apps). Basically, you clicked the app to open, then blink, and when you opened your eyes the app would be running. Not instant, but almost.
Edit: max_altitude is right - I had never thought about Intel PowerMacs. They will probably smoke the MBP's. Best luck in waiting.
