I know that Monolingual will trim down additional languages and will de-universal applications that are written for only one architecture. Are there any tools that I can use to de-PPC the apps that came with my MacBook? Do I have to recompile from source? I've already compiled Firefox, VLC, and KisMAC as Intel-only for my machine, but the impact space-wise will be much more significant if I can trim down the Apple supplied applications.

You could do it one app at a time on the command line with lipo (might be installed with the Developer tools). As there is a command line tool to do it I'd be surprised if there is not already a GUI front end for it.
