I think nobody knows for sure if Apple will use Sandy or Ivy Bridge. At any rate, I would highly doubt will see an Ivy Bridge Mac Pro because it would really push the release to Q4 of this year. So yeah let's see what happens in the next couple months.

Ivy bridge xeons will be out until probably next year, so if you want apple to have 8 and 12 core options you will want a xeon.
 
This delay should mean that we're on track for Mac Pro suitable Xeons in a month or two. Unless of course Intel announces that those will be delayed. Then Apple just has to put them in a new Mac Pro and viola.
