Do I have to do anything special to release my app internationally or does it automatically make it into all of the various app stores around the world?

The next to last step in ITC lets you select what stores you want your app to be in. By default, its set to be in every store in the world.

Also, make sure you understand the various tax implications of selling in other countries. In some, Apple collects and pays the taxes for you (but you are still liable if they make a mistake). In others, you will need to calculate and pay your own taxes. There's more to it, implication-wise, than simply "turning a switch".
