i have a jailbroken 2.1.0 iphone (AT&T, not t-mobile) and the internet will randomly not work for extended periods... meaning email, weather, shazam, safari.... pretty much anything that needs to access the web.

i thought it may have been due to the fact that i didn't 'update carrier settings' since i was fearful it would re-lock the phone.

is anyone familiar with this problem?

You can update the carrier settings it will not unjailbreak. That might be a problem not too sure

Unlocking and jailbreaking are two different things. Jailbreaking provides unrestricted access to the filesystem; unlocking allows you to use the iPhone on another GSM/UMTS carrier (in the US, your only options would be AT&T or T-Mobile).

Updating carrier settings, or performing any function that affects the baseband, will not affect the jailbreak.

ahh ok i see... i did no unlock, i jailbroke. So now that i know it's ok to update the carrier settings, i can't get that message to pop up on the screen when i connect the phone. does anyone know how to trigger it?
