For some reason the update is not showing up for me over the air or when I try to connect my phone to itunes. It says the latest updates have been installed. The update is showing for my work iphone 5s and my partners 7 but not my 7 Plus. Would there be something in the settings I need to check? I have removed my beta profile and did a hard reset but that hasn't worked either?

Do you have a beta or développer profile installed? If so, delete it and restart the phone.
 
I actually am on 11.1 beta I deleted profile and restarted my phone. Not showing up over the air for me. What can I do?
11.1 (beta or not) would be seen as newer/later than 11.0.x so you wouldn't be offered that version as an update.

How can I manually install it?
You have to use iTunes, either DFU/Recovery mode or by downloading the software file from the internet. If you don't want to lose your information you'll need a backup from 11.0.2 or earlier.
