Ask Apple :)...seriously, how do you expect to get the right answer to that question here.
Statistics from the past.....something like 1 to 3 weeks at the most.

Sorry for asking a question that I thought somebody might know the answer to.

I think (I might be wrong, I’m the “upgrade and never look back” type) that’s is typically measure in days and not weeks. If you want to go back you should probably do so quickly.

I wasn't sure when they'd stop signing, so I rolled back today. Better be safe than sorry.

I rolled my 6s plus back to 10. Way too buggy for 11 right now, maybe after a .1 update in the future.

For the record, Apple stopped signing iOS 9 on October 20th 2016. They stopped signing iOS 8 on September 30th 2015. iOS 7 on September 26th.
As you can see it's hard to predict from past history and they don't tell everyone in advance.

iOS 11 if really good on the iPhone 6s with better battery life than before.
iPad Air 2 is shocking as I have rotation problems and animation glitches.

Restoring iPad to 10.3.3 and keeping 11 on the iPhone.

My Air 2 had a lot of laggy animations when I first installed it. After a couple days use, another battery charge and a hard reset.. I'm having trouble replicating the lag. Seems pretty good.

The lag wasn't too bad to start with, so you just got used to it. However, if you roll back to 10 like i did, your first word will be "wow".

Not really. The lag was bad, now its gone, I'm not used to it. I don't get used to lag. I have another Air 2 here on 10.3.3, and it's barely faster. Email loads slower, camera loads faster. Browser is the same. **your experience may vary
