Is this possible? I don't want to lose Protube on my iPad Pro.

Shouldn't be as long as you do the backup before downgrading. I'm downgrading myself 11 has turned my SE into garbage, it's so bad.

Possible as long as you have an archived 10.3.3 backup on iTunes.

If you don't have an iOS10 backup, then you need to weigh up your options.

I sacrificed my old SMS to get back to iOS10 - all other app data luckily synced via iCloud or had an option to log in or backup to PC within the app.

Actually loving my iPhone again now - 15 hours standby, 50 minutes usage, and still 95% battery

I did this too. 10.3.3 is so much better in every important aspect. Apple really rushed iOS 11.

iTunes doesn't backup apps anymore due to App Thinning so he won't get Protube back. Protube is also gone from Purchased tab of the AppStore. The only option I see to preserve Protube is to 'update' to iOS 10.3.3 from iTunes, not restoring to it. But there will be compatibility issues afterwards. Best way is to do a full restore anyway
