Nothing indicated that this was a beta build, also the build number doesn't indicate it being a beta. The only beta profiles on the portal are for iOS 14, so either 13.7 is still waiting to go live, or someone jumped the gun.

They didn't question it when running diagnostics on the phone. But if 13.7 is not publicly released by time I sent back this device, I'll just downgrade it. Thanks for reminding me!

It shouldn't be necessary to downgrade. Apple says in the Beta FAQ:

Will installing public beta software from the Apple Beta Software Program void my hardware warranty?

No, installing the public beta software does not void your hardware warranty.
