Not to disclaim the problems you are having, but I kept my 6S on IOS 12 and I don't get any lag with the (stock) keyboard.
Running my 6S+ on iOS 14.2, have not experienced any keyboard lag. Also, did not have any lag with iOS 13.
 
Sounds like an Apple server problem. Something on the i-Device, waiting for an (to be expected - given Apple problems) overly-busy Apple server.

I get it also from time to time, but it no longer bothers me, I just keep writing and a few seconds later, it catches up with me. It only is a problem when I'm trying to accentuate a word (because depending on what language I have selected, the accented letter changes places and I haven't committed it to memory yet), so I have to wait for it to catch up, see where the letter is, and select it.

It usually takes 1 or 2 seconds (I get to write 3-5 words in the meantime)
 
I've started seeing this on my 12Max over the past week or so. I'm on 14.2.1. Restarts don't seem to help, but I haven't tried a Reset All Settings.

I have an iPhone XS Max and I have also been experiencing the keyboard lag. I’ve also noticed small issues like not capitalizing the first letter of sentences, placing apostrophes where they need to be, and even skipping letters altogether when typing. The dictionary and keyboard resets have been done and neither seem to have made any difference.

Today, it got really bad and anything I typed into Messages wouldn’t appear for 8-10 seconds. Since I was out running errands, I performed a restart (Volume Up + Lock Key). After my device powered off, I waited about 10-15 seconds before attempting to power on again. However, it would display the Apple logo and then go black again. The first time, I waited about two minutes and when it didn’t come back up, I pressed the lock key again. The Apple logo appeared and it continued through this “cycle” approximately 20 times before finally loading up. This is the first time I’ve restarted my device since upgrading to iOS 14.2. Do you think these issues are linked in any way?

The lack of capitalization seems to be related to MacRumors. I don't experience it on any other website.

It seems to have improved! But then something else breaks. Sigh. When I use a lighting headphone or an adapter that goes to a headphone - the ringer popup shows up every time I send a message.
 
I did experience the delay last night when trying to type into the search bar within the Amazon app, but so far it hasn't happened in Messages yet.
 
The lag has been REALLY bad for me the last few days (iPhone 6s, iOS 12.x). I again suggest this is a services issue. Can anyone disprove that hypothesis?

It has also started to flip itself back to letters after I’ve tapped on “123”.

I find the touch keyboard and it’s various systems maddening enough already. This makes it effing intolerable many times every day.
 
I start typing a text message or response and it is taking a second or two before the text displays. I am on 14.2.1 on my 12 Pro. It is extremely annoying. Any idea what is causing this?
 
I have had the same issue. It’s very annoying. 12 Pro, 14.3. I have turned my phone on and off a few times for other reasons and this problem still persists.
 
I've had that happen, though not frequently. I can't recall id I've experienced it on 14.3...
I'm using a 12 Pro Max.
 
It's a bug that's been around since iOS 14 was released. It seems to have gotten better but sometimes I still see it.
