If you have the ability, best to do is as followed;
1. Revert to iOS 14.6(Restore, don't apply backup)
2. Install the iOS 14 beta profile
3. Install iOS 14.7 update
4. If you previously backed up prior to the 15 launch, you would then restore your phone to factory, then restore backup once you are on 14.7b3.
There is a thread in the iOS 15 forum that proposes one possible way back to 14.6 but it didn’t work for me.
If it works for you then you can re-install the iOS 14 profile and move to 14.7

Backup in case. You will need to put iPhone into recovery mode and update which should put back stable release iOS 14.6 and then install 14.7 using beta profile. Or get the IPSW for 14.7 b3 and use recovery mode to update straight to it. Just don't confuse DFU and recovery mode. DFU mode does not have a "Update" option if you want to preserve your data.
It might be easier to restore if you want to avoid issues after downgrading.

Yes, I've been using this method for quite awhile. Press Shift + Check for Update to select the IPSW.
