4.2 will be applied to iPhone and iPod touch as well, so you won't see a beta until 4.1 is final.

Yes and yes! (only if u have the device registered on a developers account as a test device)
Betas are buggy of course, but never so serious that it will totally mess up your device, and they get better (generally) with each release. One can always downgrade if it causes too much distress.
