With iOS 4, I could write words like goin' and thinkin' and the iPhone wouldn't correct them. In iOS 5, if I type goin' the iPhone will correct it to going', which is obviously not what I want. How can I fix this? Has anyone else experienced this?

iOS 5 autocorrects apostrophes incorrectly

When it offers the correction, tap the blue "x" to cancel it before it corrects it. After a few times, it will learn that you don't want it corrected.
Every time there's an update or change in the iOS, your device has to relearn your vocabulary quirks. So, iOS4 had your apostrophes memorized; iOS5 hasn't learned it yet. Follow the advice of the poster above and soon it will work fine.
