Ios 5 back-up(restore) and jailbreak

hey there ! i hav an iPhone 4 iOS 4.3.3 factory unlocked and jailbroken. i had a lot of apps and their scores. i'm very concerned about losing them... i already did a iTunes back up. that's any chance or any precaution that i had to make so i can't lose my data ?

one more thing.... i will upgrade to iOS 5 and lose jailbreak. ok . redsnow 0.9.9b5 is there to do the tethered job... should i jailbreak after the upgrade or after the restore ??? who comes first ?
