Not quite accurate, since the iPhone 4S version is gonna be a bit different from any of the builds we got on the dev site, but the GM is always exactly the same as the official release versions

I Believe if your on beta, you have to install over iTunes. All updates from then is OTA.

I usually just do it for the heck of it...I'm kind of OCD about about my software updates. I went through a period of using backups, but then I just stopped. I like starting off fresh. Lets me know the phone is running in tip top shape. I do have iOS 5 GM by the way...

The only difference is in the file name. It is literally a waste of time

You'll have to plug it into iTunes but this is the last time. Upgrading from iOS 5 can then be done OTA.
