Even thought I have a 32gb iPhone4, still have so much music/other I used the option "Convert higher bit rate songs to 128 bit AAC", and this worked fine under iOS 4.

I really was not using the music on my iPhone that much, only when I travel on airplane/etc. Still Liked having all my music with me.

Issue:
Upon upgrading to iOS 5 a few weeks back, I needed to use it for a church after service social gathering this past Sunday, and the music would show but not play.

My wife's iPhone4 did work, only difference being never clicked that box "convert..." on her phone, since she syncs much less music.

Solution:
un-checked that option on my iPhone, re-sync.
Now everything works fine.
Definitely an Apple bug.

btw, same on my iPad2, so its across multiple devices running iOS5
