I haven't seen a thread where people share hidden iOS 5 tricks they found so I thought I'd start one (if there already is one, I'm sorry). I'll start:

In Safari for iPad, you can:
i) Tap and hold the Back/Forward button to get a list instead of tapping the buttons multiple times.

ii) Tap and hold the "New Tab" button to get a "Recently Closed Tabs" list. (Especially useful due to the new tabs at the top, which will unavoidably cause users to close some tabs accidentally.)
 
awesome feature, dismissing the keyboard after a text.
all you gatta do is drag down from the conversation view into the keyboard and it will drop down. Love it. Its simple but one of my most used actions.

Oh! This one is new to me.

How about: Settings - General - Accessibility - Speak Selection

That will give you an option on selected text to be read out

the New way of typing on iPad ;)! What you do is you place 2 fingers, one on left, one on right and "pull" it
 
Perhaps this change was made long ago and I just noticed it, or it's new.. but I can finally pull the keyboard down in Messages so I don't have to back out and re-enter a conversation to have a full screen to read with.

That's new to iOS 5 :)
I have a new one: In the newly updated iWork apps, swipe right or left to move one character space.

I use it a lot too! I think the way it works on whatsapp is better though (just tap the chat and keyboard goes down). The way it works in Messages you always end up having to scroll down because when you hid the keyboard it scrolled up

Typed shortcuts are great (Settings > general > keyboard > shortcuts).

Configure whatever shortcuts you want, so eml can become your full email address, or brb can become be right back.
