AS much as I love iOS 8, I want to restore to iOS 7 because I miss my jailbreak. However, you cannot restore a backup that has a later version of iOS to an old version of iOS. Any other ways?

You'll have to start new or restore from a backup that was made in iOS 7

It is possible to restore the ios8 backup to ios7.
The procedure is without iTunes but other programs that handle the backup
It is need to make some changes by hand in the SMS file and export the picture/videos from backup and import to ios7.

Yes, some stuff can be restored but others can not. I'm sure the iOS 8 SMS database file has changed from iOS 7 as well

It's just not as simple as an easy restore from backup using iTunes

If you'd like to instruct the OP how to do so, it would be much appreciated as I don't have a good knowledge in how to do this
 
The steps:

1. Export the sms.db from the ios8 backup by using the iBackupBot
In ibackupbot sms.db location = System Files/HomeDomain/SMS sms media (mms) = System Files/MediaDomain/Library/SMS

2. install the SQLite Expert Personal for Windows (or other SQL editor for OSX)

3. Edit the sms.db from the backup with an sqllite editor.
It is database version line that needs to be changed.
iOS 8 uses 8007 and iOS7 uses 7006.

Then import the changed sms.db file in the iOS7 backup on ibackupbot and restore the updated ios7 backup.
