When Touch ID came out, I switched to an Alphanumeric code. I only need to use it every blue moon when the device resets. Maybe once a month...if that.

For some online services, I have 32-digit passwords. Memorizing is not that big an issue for me and with Touch ID I only need to type the password in after OTA updates. So ...

It can actually be as long as you want it to be, to a certain limit probably

Anyone know if using a special character is a good idea or is it not secure enough? Like if you hold down a letter on the keyboard and use one of the funky ones with dots on top. Someone suggested it but I feel like some iOS bug could change my keyboard and I could be locked out forever, or there must be some other downsides.

Well if it's a character that's legitimately used in another language you should be fine.
Although using funky characters will not rectify you using your cat's name as a password; know that!
