Will I be able to still backup my iPhone/iPad to my Mac through iTunes if I upgrade to iOS/iPadOS 15.
With v14 I had to install an update in iTunes to read the iOS devices.

Don't want to upgrade and find I am snookered.

I'm also looking to find this out. Any brave souls, please do tell.

And if the Reminders app forces the upgrade or still allows us to use the old format. I've been holding out for two years so far to keep compatibility with Mojave.

Aside: Apple thinks that breaking iCloud support in progressive releases will induce people like myself to pay for all new devices. Fat chance. I've been progressively removing myself from the iCloud ecosystem, towards Google and Microsoft cloud offerings, for precisely this reason.

I downgraded my iPad Air 2020 from iPadOS 15 to 14.8 a few days ago by connecting it my MacBook Pro 2014 running Mojave. It told me I needed the update to connect, I selected to install the update, then it connected without issue. If it does that, then it should allow backups onto Mojave, but I use iCloud backups so I didn’t test backups via iTunes on Mojave. So to reiterate, iPadOS 15 was able to connect to iTunes on Mojave.
