Its been a few iOS versions since I’ve used the Mail app. The reason was that when I have my personal and my work email added I would always be sending messages from the wrong account since iOS would choose for me and I wouldn’t notice.

Has anything changed with how emails are sent? Can I choose a default account to always send from and only switch to the other if I want to?

Yes. You can choose your default email, and change the "from" per email if you want. I have 4 email accounts on my iOS devices, and rarely go wrong.

Thank you. I just added one account, do you know if I have to add a second account to see where I change the the default “From” account?

Settings -> Mail

Default is the last option at the bottom of the screen.
