Same as usual.
You use blobs to reinstall iOS (that's the point)
You can only use blobs while they are signed.
You can no longer use blobs when Apple removes the signing for that particular version, at which time that blob has no value at all. And, that becomes the new point of that blob. Unsigned = not useful.
