Instead of the coloured text in different apps
Find it really hard to see colour text

Currently, no.

A greyscale with permanent dark mode as of now is the closest thing you can get, which removes all colours entirely. Or smart invert.

And yes, I agree that text in a certain color is very difficult to read in a dark background. I’ve posted one thread about this topic right before the release of iOS 13.
