Since High Sierra comes out NEXT Tuesday how does iOS 11 and its Photos app work with the current MacOS Sierra Photos? If I set my iOS 11 photos app to "HEIV" instead of JPG how will Photos on my Mac handle this before the High Sierra upgrade? Is there a risk, should I just set Photos to use jpg until High Sierra? Thanks!

To be honest I was worried about some conflict... I'm sure Apple considered it though. Same question applies to other iOS 11 features like Family Sharing plans, I want to buy the "big" 2TB plan and share it with my wife and two kids, right now they all have to have their own smaller plans which add up to more expense... but if I switch will that work with MacOS Sierra? Oh well... like you said maybe I can just try.
 
These files are incompatible with Sierra. High Sierra required.

But that's mostly OK, since ALL Sierra Macs are compatible with High Sierra.

Also, you can install High Sierra on some Macs which aren't officially supported by High Sierra. I'm typing on one right now, a late 2008 MacBook 13" Core 2 Duo 2.0 GHz. Works perfectly.
