I updated to 17.1 yesterday afternoon and when I woke up this morning my phone was charged to 100% - I double checked to see if the update had reset the battery preference to "off" but it was still on.

I did remember that sometime during the night the phone woke me up with its "bong" noise it makes when it is connected (or reconnected) to a charger.

I was using my new 12 South High Rise Charging stand with the phone in standby mode.

Have you reported via Feedback Assistant, since this is beta software?
 
It happened to me once on 17.0.2. I think it may be intentional to charge the phone to full once in a while, but they need to communicate better if that's the case.

This is true. It's on the Apple website in the bottom paragraph:

It happened again last night so now I suspect that it is a bug introduced in the beta. I did submit a Feedback report to Apple.
