iOS5 - Backups Gone ! Can i restore from time machine ?

OK - Finally got iOS5 on and want to restore my data from a previous backup but they are all gone !

is it possible to restore my iPhone from a back up on time machine ?

Where are my backups kept ? i can locate them on time machine and drag them to current disk and restore from that

please help !!
