Hi

I am not using iCloud and i don't want to use the iTunes Wi-Fi sync options.

Can i turn off the iTunes Wi-Fi sync? As I prefer to do my own syn/back up.

Yes, you had to have turned it on to be using it. Wire up your device and turn it off on the summary pane.

I love wifi sync!! That was one thing I was looking forward too

I liked the idea of it but in reality I dislike it. I don't know if it's just me but when I have it turned on and my phone is on the WiFi (which is most of the time) iTunes just keeps popping up from closed.

I always have my iTunes open so that doesn't bother me

You can turn that off, just uncheck for it to auto open when it detects your device.
