I'm not a display expert, but it seems to me they're creeping closer to being hardware capable of churning out retina graphics power with current hardware.

The current iPad/ iPad 2 resolution is 1024 x 768
However the iPad 2 can process and spit out 1920 x 1080 through an adapter for HDTVs.
A theoretical retina resolution of 2560 x 1920 doesn't seem too far off for the next model, right? Or am I missing something?

Yes. As soon as the rumor of the PowerVR SGX543 GPU leaked out, there was no question about the iPad's ability to push pixels. It was more of a matter of the display yield in production. Something that'll come with time and more investment I presume.
