I was reading about DNS servers and how to change them to maybe Google's or Cloudfare's. On my Window's desktop I changed the IPv4 and IPv6 DNS. On my iPad, it only gives me the option to change IPv4. Is there an IPv6 option on the iPad somewhere?

There is definitely no reason to switch to IPv6 on a personal device - ever. The address space for private devices is plenty big. Go ahead and change your DNS to 1.1.1.1 or 8.8.8.8 if you'd like, though.
