iPad iOS Numbers ‘Fit to Content’ sub menu missing

I’ve come across this issue several times recently. The Fit to Content sub menu in the bottom right Column button when in a Numbers spreadsheet appears in some and does not in others. I can’t figure out at all what could be different from spreadsheet to spreadsheet. Anyone else have this issue? See attached. Just stumped like nothing else...I WANT to use the option but don’t know why it ‘disappears.’
