I've noticed that Amazon.co.uk has the ipad mini 5 "temporarily out of stock" across all colours. Could this be a sign for incoming updates?

Probably not until the end of this year or this time next year. It seems like iPads are on an approx. 18 month cycle.

One can never be definitive with Apple. Once they establish a pattern, they’ve been known to change it. But most of their iPads seem to be on that release cycle. I’m referring to their iPad Pros and regular iPad right now, but they could adopt that same cycle for the Air and Mini, assuming they have plans to consistently release updated models, and not just sporadically update them.
 
The mini doesn’t follows typical schedule but is eager it will be awhile. Like 2022.
