So I'm looking at the comparison chart and one of the glaring things I noticed is that the 9.7" iPad display does not have Anti reflective coating nor is it laminated. How will that effect the screen quality vs the others (even Mini) which has these features? Also is the Mini even worth getting at this point in terms of processor power? The iPad Pro could in theory replace my MBP for me as I can get 512GB of storage but I'd want a way to backup locally instead of the cloud which means I'd still need a Mac.

The laminated display is better. To what extent s really subjective. Whether the Mini has the power you need is also subjective, but if you want something capable of replacing your MBP, A Mini is probably not what you want.
Depends on where you use it. Brightly lit environment? 9.7 Pro and Air 2 win. In the bedroom at night with lights off before sleeping? No difference.
One thing I've noticed, fingertips glide more smoothly on the 2017 iPad and iPad Air's display than on Air 2 and 9.7 Pro. Perhaps the AR coating adds drag?
As for the iPad mini, if you really like the size, it might be as good a system configuration as we'll ever get.
The anti-reflective coating/laminated display essentially just helps with reflectivity in a brighter environment.
The iPad mini I think serves more as a portability factor. It's still supported and has more than a power for media tasks, but not on the level that the new iPad Pro is on.
If you're looking for a replacement for your MacBook Pro, then I would suggest the 12.9 iPad Pro if you can appreciate the size. It could easily act as a media device and laptop, with the smart connector/keyboard. I also think it depends on how much you physically appreciate having a keyboard or if you just want the iPad.
Well I'm not sure if I can go without a Mac completely just yet. There's still thing you can just do better on the Mac than iOS. Plus I'm still traditional in certain ways. I even still buy CDs lots of times. But if I bought an iPad I'd still want to consider longevity. Apple products are not cheap. The cheapest 15" MBP for example is $3,199 Canadian. That's outrageous no matter what the specs are. I like the iPad mini for its size but I get the feeling Apple is going to discontinue it at some point. Maybe I'll wait and test out the 10.5" iPad Pro and see how it feels.
