I currently have two ipad pro 11 in our family and want to be able to connect to an external monitor for multitasking and larger screens.
I connect my ipad pro 11 M1 version and it seems it display apps independently between my ipad and the external monitor, although there seems to be only one adjustment I can do for the external monitor (regular font and larger font size). The text is ok but definitely not as crisp as when I connect the same monitor to my imac 27 2019 (the monitor is 27'' 4K connected via a USB-C to HDMI adapter). My first question is that is it normal for the text clarity and is there any adjustment on resolution etc. we can do (does it automatically detect and display on 4k resolution)?

2. My daugther has ipad pro 11 first gen with A12x, and when she connect ipad to the same 27 4k monitor, there is only 1 mode to just mirror the ipad to the external monitor, and because of the aspect ratio, only a portion of the screen is used. Is this normal? And same thing with the text, not very clear and I am not sure what resolution is it displaying
 
It doesn't sound normal for the text to not be clear, but I'm not 100% sure if it should be perfectly crisp either. What resolution is the monitor displaying at, or what resolution is the iPad outputting at? You should be able to find this info by looking through the menus on the monitor. If it's something other than 4K, then make sure you're using an adapter and/or cable that supports 4K. There's no way to configure the resolution manually.

As for your daughter's iPad, that is normal. It can only be mirrored using the 4:3 aspect ratio. Only iPads with the M-series processor have full external display support.

 
Only the iPads with the M chips can do full external monitor with Stage Manager on iPadOS 16. I use a 1080P ACER IPS 27" Monitor with my M1 iPad Pro 11 and my text seems very sharp and crisp to my eyes.
