Bottom line... I can get a decent deal on a new 2021 Pro. Is it worth an upgrade from my current 2018?
I tried searching but didn’t really find a clear answer on this.

Speed difference is barely noticeable. RAM difference is, less reloads. Are you bothered by reloads in the 2018? Other than that do you are care about Stage Manager? If the answer is no to both, don't spend more money
 
What about 2018 12.9” to 2021 12.9 M1? Got an offer of $460 for my 2018. Pretty low 🥲
 
I don’t think it’s worth trading a 2018 11” to a M1 11”, mainly due to the display being the same. Unless you feel the 2018 is slow and the Safari reloads bug you a lot. I’ve decided to keep my 2018 until an 11” with better display tech comes out.

If I were on the 12,9 models I’d swap for a M1 one at launch due to the screen.
 
You're better off waiting for at least the M3 which would also probably have a new external design.
It sounds like Stage Manager will need time to become a compelling feature anyway.

It depends on the storage it has. I have a M1 12.9 and a 2018 12.9. For now I am keeping both, but at some point in the future I might sell the 2018 one, I'm probably going to put the 2018 at $490 (256GB, 94% battery) so I would say $460 is definitely not bad for 128GB and not terrible for a 256GB model either....
 
I would also like to update from 2020 11" ipad pro to 2021 m1 11" ipad pro for full resolution external monitor support.

What do you think?
