I see a small error on my part, the 512GB model was $2,429 so the new one is now $80 less rather than $60 (I mistakenly typed $160 anyway). The 1TB price is correct, the new one is $200 more.
Still, why the 512GB price has gone down $80 but the 1TB has gone up $200 from last year makes no sense.

The 1TB iPad Pro (2021) has 16GB of RAM whereas the 512GB model has 8GB of RAM. All models of the 2020 iPad Pro came with 6GB of RAM. In the US, the 1TB 12.9" iPad Pro (2021) also saw a substantial price increase ($1,649 to $1,799) over the 2020 model.

Ah, yes of course. I completely overlooked the additional RAM. That would explain it, thank you.
$1649 is 2020 12.9 1TB Cellular. Apples to apple is $1999 2021 12.9 1TB Cellular so $350 more ($100 Mini-LED XDR + $200 RAM + $50 5G).
