It’s not ideal for that, you’ll need some sort of alternative thin client. You’ll also need a monitor to set it all up and trouble shoot issues.
I currently do the same thing with my Mac mini. It’s very cool, a bit like having macos as an app.
I use jump desktop to work it all, and sidecar if I need more precision (pencil in photoshop for example).
The system breaks down after a restart and so an accessible monitor is needed to get it all up and running again. It’s a real downfall. There is a terminal command to restart which pre authorises with your password which mitigates the issue when you’re in control of the shutdown however.
The big caveat: it works very well but It’s nowhere near as efficient as using native iOS or native macos, especially over wifi. Works over usb c much better though.
