So, I just popped for a 10.5" iPad Pro, and I happen to have a recent vintage bluetooth Apple Magic Keyboard kicking around that I'm not using. Is it reasonable to assume the two will match up properly and if so, will any, many, all of the keyboard function keys work properly?

I use the older Magic Keyboard with my 9.7" Pro with no problems. All shortcuts work great.

Even the volume and brightness adjustment keys work as expected.
 
I am using the new 12.9 iPad Pro and typing this comment on an old Magic keyboard. They pair and work together perfectly. Therefore, I have only purchased a cover for the iPad and will use the Magic keyboard for as long as I am comfortable with it (which may be for the duration of my use of the iPad). I like that they are not attached and I can either take just the iPad or both in my carry bag.

This is exactly what I do. I really prefer this keyboard over the feel of the smart keyboards. I have the version that recharges via lightning and i only really have to charge it every month or two. And i like how I use the same cable that I use for my iPad when I do.
