Too be fair, video has never been the focus of any remote desktop app. Perhaps with the advent of the iPad some developers may write special routines to handle video specifically.
What if.. The VNC Client worked the way it does now, but had the same idea as "ORB" involved. Cause with ORB, you have an application on your computer, and an app on our iphone, and it lets you stream all of our files… music, photos, movies… and it works well… its not choppy at all.. Now I imagine somewhere in the code is some heavy duty conversions to keep the quality of the smaller display (iphone) while being viewed in real time.
What if…first off, I dunt know much about programming or anything like that… but would this work?
The way I see it is… when Im using Jaadu VNC on my iphone, the app streams a connection to my home computer, thus it performs a task of/like taking many screen captures and sending it back to the iphone, at a decent rate… and all the mean while calculating where our finger and gestures are on the screen, sending that calculated dated back to the remote computer, prompting it of where you had moved the mouse or waterer else. It does this in a great way.

Ok so, with my comment above.
When the VNC client on the iphone is connected to the remote computer it exchanges information between the two, keeping both in sync with your commands. What if… say, your on the VNC client, and you come to your Videos folders, and you have them viewed in a larger size thumbnail so you can get a preview button to play your files. You click your Play Button to view your file… the whole screen goes dim… and wherever your mouse is, a small blurred out glow appears and does a loading animation of lights or waterer(same idea as a Youtube load time, or the Load time in a Game on the iPhone, so it can build up its 'memory, or waterer it does while loading). Moments later, (and hopefully, mere seconds later) the screen returns to its natural ambient self from before and then the video starts to play and the audio is in sync. And when you clicked back into the OS environment, off of the 'video' the video stops like normal, and the screen is then at your command.
The iPhone VNC client would need to be able to accept shared packets with information about that Video file (weather your watching it as a thumbnail preview (in MAC OS X), and media players like "Quicktime, Windows Media Player, Internet explorer using Youtube like sites, and possibly some levels of gaming". ORB does this, by giving your computer an application that allows you to select folders so that you can stream all containing video files over the internet, and down into your iphone/ipod touch. It does this very well if you are on wifi connection, and a nice feature setting/compression for 3G connections.

So I think, if you can incorporate those two main ideas some way into one as a VNC Client hat directly connects to your computer in a way that gives you the full real feel of being infront of your computer. No matter if you want to play a movie, listen to a song, edit some office files or whatever, you will have Touch Access control to your entire computer.

Gestures:
1 finger controls mouse with pin point accuracy across the screen in realtime over the internet to the remote desktop.
2 fingers enables scrolling up and down, and sideways. 2 fingers rotate, rotates the displayed item. Pinch to zoom in and out.
**zooming in and out controls the over all resolution of the display. Best worked in Landscape mode**
3 swipes through files in Cover Flow, Internet (back and forth)
4 fingers swipe down - brings up the "RUNNING APPLICATIONS HOT CORNER COMMAND" /or whatever else
Imagine much more touch capabilities and gestures and styles to amaze the iPAD in the form of a VNC Client, with that real-time connection that allows you to your whole computer…remotely.
idea(Jaadu) + (ORB) = make pretty babies.
