I have several videos that I shot with my iPhone in my picture folders. They sync and play on my iPad without having to convert them from .MOV and add them to iTunes. What is different about iPhone .MOV files from those shot on my Canon as a .MOV?

.mov doesnt mean anything really. It doesnt tell you the codec the file uses. iDevices use H.264, probably your Canon doesnt.
