Is there a any way to go back to iOS 8? I accidentally upgraded to 9 a while back, and though I don't use it much, it is so hard to use like this.

I only need it to use iBooks, Safari and MS Outlook. So, I don't need any other features.

Help me out if you can.
 
Unfortunately no. At this time Apple will not sign any software below iOS 11.
 
My iPad 3 was running like crap on ios 9, but when I did a clean install, on the advise of someone on the board, it started running really well again.
 
Is there a tutorial or step-by-step anywhere to help with that?
CoolBooter is a dual boot utility which will make a second partition (and eats up storage) so this mean your main OS will still be iOS 9 so what I recommend you to do is a full downgrade to iOS 8.4.1 (which is still OTA signed by Apple for some old devices) you can use this tutorial to do so : https://www.reddit.com/r/jailbreak/comments/719v6j/tutorial_downgrade_ios_935_to_841_ota_no_shsh/
It's a pretty easy tutorial so you shouldn't screw up anything even if you are not experienced in jailbreaking although if you do screw up keep in mind that you can still DFU restore your device to factory settings with iTunes.

P.S. : Don't forget to backup your device just in case something go wrong (which shouldn't be the case).

You can downgrade it to 6.1.3 without saved SHSH blobs using OdysseusOTA on OS X or Beehind on Windows. This requires you to jailbreak the device and install OpenSSH.

I tried it myself on an old 4s that I had lying around and it worked perfectly fine.
