Don’t people feel like the pic looks a bit less high quality and clear than the original scene looked through the lens? Like right before you tap to take the photo it’s crisp but compared to it the photo made is blurrier.
 
Well, the "original" is basically like looking through the viewfinder of a camera and the final shot can have a lot of things to make it look of a lower quality. Primary of them is it being blurry either caused by camera shake (either due to movement of the iPhone usually caused by not holding it securely, the way you "tap" the shutter button or subject movement if the light is not perfect). Now if you are seeing noticeably lower quality in good light - where the iPhones excel - then there might be something wrong with the iPhone itself. Because in good light, most of the problems I pointed out should not have as big an effect on the final image.

I fixed it on my iphone 11 by going to settings->camera and switching from high efficiency to compatible.

Nothing else worked, but this did. I understand the colors are richer in high efficiency mode (paired with smaller sized files it would have been perfect), but I just found it very inconvenient and psychologically uncomfortable to see a crystal clear image right before taking the pic and then finding a blurry image at first in the photo app.

Yes you fix it by zooming in and out but it is annoying and when you exit the photo and select it again you have to go through the same process again.
